Green Breakfast to Begin Your Day

Is it because you are in too much of a hurry or it’s just convenient. Well, grabbing something at work or skipping breakfast entirely does not go down well with your body. Your metabolism is greatly affected and as a result, your body starts retaining water. What follows next, is that you gain additional pounds that are not easy to lose, and develop flabby arms, thighs and tummy. It’s better to grab some breakfast than to endure this.

Green veggies are the best solution out if you want a healthy and fresh start for your day. They are rich in nutrients, which help in detoxifying your system and losing weight. There is no justifiable reason as to why you should not have a green breakfast.

Here are some of the dishes that you can include as a part of your diet.

1. Kale and Quinoa Salad

Kale is home to vitamins like A, C K and has phytonutrients that help lower your cholesterol, fight cancer and detox your system. Combine it with quinoa, which has all the amino acids needed by your body; together they make an ideal breakfast. All that is required for this dish is a combination of healthy ingredients like-

  • 1 cup quinoa
  • 2 cup kale leaves , cut into small pieces
  • 2-3 table spoon of olive oil
  • 2 tablespoon of lemon juice
  • Few garlic cloves, minced
  • Salt, sugar and pepper to taste
  • 2 cups of water
  • ½ cup dried currants
  • Sesame seeds for garnishing

Boil the water in the saucepan and add quinoa to it. Cover the saucepan and leave it on medium fire. After 10 minutes remove the saucepan from the heat and check if water is absorbed by quinoa. Let the quinoa cool down. Prepare another bowl where you can mix lemon juice, garlic cloves, salt, sugar, pepper, olive oil and kale together. Add the quinoa and the currants to the mixture. For serving add some sesame seeds over the salad.

2. Green Smoothies

Green smoothies help detox your system and keep you hydrated. You can prepare a green smoothie with any of the green vegetables like broccoli, celery, spinach or kale. Along with them, add some frozen bananas, apples and strawberries. Just give all of it a good blend in your mixer and enjoy your morning. You could also add some honey for sweetening.

3. Fruit Salad

Salads are not only healthy, but they are also very simple and easy to make. Green fruit salads can have variety including avocados, kiwis, pineapple, grapes and apples, depending on your choice. You can have them with whipped cream or just a squeeze of lemon.

4. Green Burrito

Burritos are every one’s favorite and with some green in them, they are just the right choice for breakfast. Burritos are generally made from spicy black beans. For a healthier option, try adding avocados, spinach or broccoli as filling. To add flavor, try adding some tomatoes and green peppers. It can be a fun surprise.

5. Avocado and kale Frittatas

This egg based delight is enjoyed by many. Frittatas taste even better with avocados, kale, collards, spring onions and mushrooms as they give the dish a unique flavor. All you need to do is to follow the normal routine of making frittatas. Cut the leafy greens, put them in a heat proof bowl, and leave them to soak for about 10-12 minutes in boiling water. Meanwhile stir fry the rest of the veggies, until they turn soft. Once this is done, add the leafy greens to them and cook till they all become tender. The rest is the usual process of pouring the beaten egg over the vegetables and baking the contents.

6. Celery and Parsley Salad with Golden Raisins

Celery, parsley and golden raisin salad has the optimum mix of vitamin A, C, E, antioxidants and flavonoids. Together they provide you with all the essential nutrients, and taste wonderful too. It is easy to make and takes just a few minutes to prepare. To start with, add a handful of raisins and 2 1/2 tablespoons of vinegar to a microwave bowl. Keep the raisins in there till they turn plump. Then mix 2-3 chopped celery stalks, parsley leaves and raisins together. Once this is done, add salt, pepper, vinegar and oil dressing over the salad.

7. Green Omelette

Isn’t omelette just the perfect breakfast one can have? Add some veggies like spinach, chopped broccoli, shallots, green pepper; not only do they make your omelette greener, but also healthier. Just stir fry all the veggies before adding them to the omelette and follow the normal routine. Also try using margarine instead of butter. Your green omelette is hot and ready to be served.

8. Avocados, Asparagus and Egg sandwich

Well a lot of people either love asparagus or hate it, but they surely love an egg sandwich. Avocados add additional flavor and nutrition to the combo. Take two slices of whole wheat bread, ½ trimmed asparagus, 1 finely chopped avocado and 3-4 eggs. Boil the asparagus, mash the avocados with lime juice and stir them together in a pan. Meanwhile cook the eggs. Apply the asparagus-avocado spread on toasted bread slices and place the eggs and bacon between them. Sprinkle some salt and pepper.
